A Sandwich a Day: Avocado Mayo and Smoked Turkey at Columbine

The Smoked Turkey sandwich ($8.50) at Columbine sounded too simple, and so for the longest time I tried every other, more interesting sounding sandwich on Columbine's menu. And then one day a co-worker told me about her "favorite sandwich ever." The Smoked Turkey. Really? So I gave it a try.
And it's truly awesome. 7-grain bread is the base, both top and bottom insides brushed with avocado that's been whipped smooth into mayo. A thing of glory, buttery goodness, though spread with restraint. The turkey is spread in feather-thin layers, almost shavings, with a strip of salty-crisp bacon, meaty crunches beneath fresh tomato slices and lettuce. So simple and delicious. I was furious at myself for not trying it earlier—but I'll be back!
