Breakfast of Champions: Momofuku Milk Bar Pork and Egg Bun

While my favorite breakfast sandwich remains the Momofuku Milk Bar English Muffin, it is only available on weekends. Fortunately Milk Bar also serves another sandwich that I can heartily recommend, available seven days a week—the pork and egg bun. Essentially a breakfast riff on Momofuku's famed pork buns, the breakfast version adds an egg that is poached and then deep fried on top of the standard bun filling: pork belly, cucumber, scallions and hoisin sauce. The breakfast sandwich further differs from the lunch and dinner variety because it is served on an over-sized homemade bun.
The result is every bit as compelling as the regular pork buns, offering one a salty, fatty treat balanced by the sweetness of the hoisin sauce and the rich creaminess from the egg. Also, the bun is better—made in house by baker James Mark, it's far larger and more compliant than the regular buns, allowing it to truly wrap itself around the loose contents and hold them in a snug, pillowy embrace.

The egg adds creaminess to an already rich dish, and it is the combination of all these flavors and textures that make the pork and egg bun such a success. Thanks for the write-up, Nick!

I had it once and I felt it was too much sauce, otherwise everything else was good. Very filling also.

One of my favorite dishes in NYC. Probably one of the reasons I also will create the MomofukuAtHome website as a 'Cook the Book' when it comes out on Oct 27th...
