Breakfast of Champions: Momofuku Milk Bar English Muffin

My favorite breakfast sandwich is unquestionably the English muffin at Momofuku Milk Bar. It is an elusive little sandwich, offered only on weekends, but it is worth seeking out. And despite being rather pricey compared to the McDonald's Egg McMuffin, which served as its inspiration, it is worth every penny. It is comprised of a homemade English muffin spiked with buttermilk and dusted with cornmeal that is slathered in a fiery black pepper butter with a deep fried-soft poached egg served on a bed of sweet caramelized onions and Benton's bacon. The recent addition of pea shoots, finally in season, to the sandwich adds both a pleasing crunch and earthiness to the experience, which is a deeply comforting one. The egg will burst as you compress the sandwich for your first bite, the yolk exploding and oozing over the rest of the fillings. The perfect ratios of sweetness from the onions and saltiness and smoke from the bacon combine with the creamy egg make for the perfect contrast to the crunchiness of the muffin.

That sounds awesome. Great description.
You should consider the "Junior" at Shopsin's.
It's a plate with pulled pork (spicy or sweet, I recommend spicy), wet but fluffy scrambled eggs, and stringy, melty mac and cheese with two slices of toasted, buttered potato bread. Make your own sandwiches as you go and you're in business. I recommend adding a side of fried hashbrowns with melted jack and Hatch chile. Oh boy.

You had me at Benton's bacon. Yum. Too bad I live much closer to the actual Benton's than the place at which this delicious sandwich is served.
