Here's yet another serving of some delicious educational opportunities to get down and dirty for the approaching weekend and the following week. All classes listed still have openings, but if you hear otherwise, please let us know.

'The Evolution of Cocktails Post Prohibition through Today' at Astor Center
Saturday, June 27, 6:30 to 8:30 p.m., $65
Charles Hardwick of Blue Owl Cocktail Room takes you through the history of cocktails like The Grasshopper and The Pink Lady and will show you how to concoct them. This class is hands-on, so bring out your inner bartender.

'Dinner in Under 45 Minutes' at ICE
Tuesday, June 30, 6 to 10 p.m., $100
Chef Michele Zellers will show students with a passion for cooking how to make a creative meal in under 45 minutes. On the menu: baked fish with harissa with sautéed spinach and cauliflower puree, chicken coconut curry with basmati rice, beef tenderloin with asparagus with lemon-shallot dressing and Bibb salad.

'Meet the Maker: The Cellars at Jasper Hill' at Murray's Cheese
Wednesday, July 1, 6:30 to 8 p.m., $50
After a tasting of his own cheese, Mateo Kehler will discuss theory and practice of regional food systems through his own endeavor of opening 22,000 square feet of cheese caves as a vehicle for renewal and rural revitalization.

'A Taste of Greece: Hands-On Cooking and Wine Pairing' at Astor Center
Wednesday, July 1, 6:30 to 9:30 p.m., $125
Carl Raymond will lead this class on making a delicious Greek meal, complete with tzatziki with fennel, blue cheese and tomato spread, avgolemono soup, pasticcio, chicken with tomatoes and fresh feta, and an almond and yogurt cake with honey syrup. While eating your creations, you'll taste various greek wines.

'Canning' at Sweet Deliverance Kitchen
Wednesday, July 1, 8 p.m., $40
Learn how to make raspberry jam and pickled pickled baby carrots from start to finish. You'll witness a demo on canning, pickling, and preserving using the season's best produce.

'The Great Gastronomical Grill' at ICE
Wednesday, July 1, and Thursday, July 2, 6 to 10 p.m., $220
Over the course of two days, Daniel Rosati will show off some clever uses of the grill on the hot days of summer. On the menu: barbecued clams, ribs two ways, grilled marinated shrimp, herb roasted tomatoes, and more.
