Nicknamed the Rolls-Royce of salmon, the Copper River Salmon has been hauled in from Alaska and starting today, will be on the menu at the Grand Central Oyster Bar. The fatty, brilliant red-colored salmon will be available through the rest of the month, if not longer. The eight-ounce filets are selling for $39.95 (for the Copper River King) and $30.95 (for the Copper River Sockeye), but dependent upon market prices.

A little backstory on the fish: they build up incredible reserves of fat and nutrients to carry them upstream, hence such full flavor and a fan club.
