Sugar Rush: Momofuku Milk Bar's New Cereal Soft Serve Flavors

Momofuku Milk Bar has just rolled out four new soft serve flavors inspired by their wildly popular cereal milk: Cap'n Crunch, Lucky Charms, Fruity Pebbles and cereal milk (infused with Corn Flakes). They're also offering the cereals themselves as toppings for each, further enhancing the authenticity with a familiar textural component.

I sampled all four and there is no doubt about the flavor—they are all spot-on tasting like the cereals themselves, the soft serve base adding a richness and creaminess far beyond milk. They are visually evocative as well. The Lucky Charms is a pastel green that's identical to the dessicated marshmallows in the cereal, the Cap'n Crunch a pale straw yellow and the Fruity Pebbles the same light purple color the milk turns at the end of a bowl. After sampling all four flavors, and despite the fact that Fruity Pebbles are my favorite of the cereals offered, I like the cereal milk flavor the most, especially after it's topped with crunchy, buttery tasting Corn Flakes. But really, I could happily indulge in any of the flavors—they are all delicious.

This is exciting news. But, here's my question:

Does the Milk bar simply create the soft serve using the cereals as a base ingredient, or do they actually craft the soft serve with other ingredients to give an impression of the cereals' flavors?

The latter method would be the most exciting, I think. I always assumed this was how they made the cereal milk, and that notion of " how did they get this to taste this way?" was a cool added edge to that creation....

Momofuku Ko when it first opened did a cereal milk panna cotta which they used corn flakes soaked in milk for a number of hours to get the flavor in the milk.

@ teenagefoodie Hopefully for at least a month, I love the flavors!

@ JudgeFudge They use the actual cereal but it is still an impressive feat as they add other ingredients such as salt and sugar to give the right mouth feel and flavor profile. It is definitely not just a case of mixing the cereal into the soft serve, the integration is total and perfectly balanced.

I love Capn Crunch and Fruity Pebbles, but I dislike the milk that's left over. Is the ice cream cereal-flavored or is it really supposed to taste like just the milk? Both these cereals always leave milk that has a weird 'skin' over it, barf

@Seriouslyeating One of my life's simple pleasures is the cereal milk left at the bottom of the bowl which is why I love the original cereal milk (and new soft serve) so much. But fear not, the ice cream tastes like the cereal itself, except of course the cereal milk flavor.

I have tried all soft serve ice cream flavors, and I daresay I prefer the Fruity Pebbles milk soft serve the most, especially when topped with Fruity Pebbles bits. I also have a soft spot for Cap'n Crunch, so the ice cream itself is a favorite as well. Aside from the ice cream, Momofuku Milk Bar also unveiled the key lime cake, with sour cream and key lime curd. Just wonderful!

i just got back from there today and it is AMAZING

of all the flavors i liked the subtlety of the cereal milk the best. Fruity pebbles wasn't too bad either, but i like it simple

Mmmm, I may have to go there tomorrow to try the Lucky Charms one!
