Sugar Rush: Bouchon Bakery's Linzer Cookies for Valentine's Day

If you're a linzer tort freak like me, you know that all too often the cookies are ruined by cheap, commercial, industrial-grade raspberry jam filling. But for Bouchon Bakery's heart-shaped linzer torte for Valentine's Day they use their own house-made raspberry jam, which has the right balance of sweet and tart and tastes like a bunch of sun-kissed raspberries that have been crushed with a mortar and pestle.

The hazelnut flour in the cookie dough supplies the much needed nutty complement to the raspberry jam. I could do without the confectioner's sugar dusting (good for the dry cleaning business but little else in my opinion), but I guess when it comes to linzer tortes, my search for perfection will just have to continue.
