Cured olive shortbread

This cookie is the underdog of cookies. In terms of looks alone, Abraço's cured olive shortbread doesn't have the chocolate bacon hoo-haa New York confections have taken to tarting themselves up with lately. Like its more famous sibling the olive oil loaf, this cookie takes the high road.

Do you love salt? Do you love sweet butter? This cookie delights with both. Approximately a half-centimeter thick, its compressed flaky crumble will be familiar to shortbread fans. Yet it's the chewy, very olive-y olives that surprise you—at once instantly familiar and incongruously delicious.
