Butcher Tom Mylan Makes Chili This Weekend

Normally when Tom Mylan (the butcher for Diner, Marlow & Sons, and Bonita) is spotted in public, a roasted pig is involved. But this Sunday, he's embracing chili. His beans-less, tomato-less chili will be served at the Handmade Holiday Craft Fair at 3rd Ward in Bushwick.
Why no tomatoes? "Tomatoes are for retards," he said, when asked about the glaring absence. His secret weapon instead is chili paste made from dried pasilla and guajillo chilis, de-seeded then soaked in hot water and puréed.
Since it would be sacrilegious for a butcher to make vegetarian chili, Mylan will throw in some Fleisher's beef, leftover turkey (wait, is it still good?), and "Carlos Castaneda grade Mexi-wizard brujo magic." And OK fine, maybe some hog, he insinuated.
