Win Tickets to Thomas Keller Event This Weekend

We have two tickets to a Thomas Keller event at the Astor Center this Saturday at 6:30 p.m., celebrating his new book Under Pressure. Keller will join his friend and co-author Michael Ruhlman, along with Per Se chef de cuisine Jonathan Benno, to chat about the principles of sous-vide (the slow cooking in plastic bags below the boiling point).

The lucky winners will also get an autographed copy of the sous-vide book. To win, just tell us your favorite sous-vide dish and if you've never had one, something tasty Mom used to throw in a plastic bag. We'll pick two winners at random and have the tickets waiting at the door. Comments will close at Noon EST on Friday. Standard Serious Eats contest rules apply.

Simple foods in my childhood home, so I'll add Shake and Bake as well!

Never ate anything sous-vide but would love to. And unfortunately my mother never cooked anything tasty. But I would love to hear Chef Keller speak about the technique as I will be getting a sous-vide combo from Fresh Meal Solutions thanks to Michael Ruhlman's blog.

Duck I had at JoJo once that was unbelievably good, even though I didn't think the duck would work sous-vide. I trusted Jean-Georges and it paid off!

Ooo it was either Thanksgiving turley in a bag or BBQ pork butt in a bag in the microwave when the grill and oven broke!

My mom didn't make anything in a plastic bag--she barely cooked at all, and when she did, it was out of a can. My husband, however, makes beer-brined pork chops that are incredible.

I've always wanted to try Martin Picard's Stuffed trotters which he sous vides and serves with fois.
Mom used to "sous vide" pre packaged food that you throw in boiling water. Wonder if that counts.

When I was a kid, we were broke, so the only "in a bag" meals we had were the boil-in-bag frozen meals like salisbury steak and turkey with gravy! Sodium-tastic!

How about chocolate chip cookies in a plastic bag?

i make pretty good steamed broccoli using those ziploc steamer bags, so let's go with that.

Hmm.. I faux-sous vide some chicken breast this weekend with butter and herbs in Saran wrap. I got the temperature too high and it was good but not great. The confit byaldi i served it over, however, was stellar keller.

I've never had anything prepared sous-vide but my most fond remembrance of dish involving a plastic bag from childhood is when my mom used to marinate pork tenderloin in sesame oil, honey, fresh ginger, brown sugar, garlic and soy sauce overnight before coating it in sesame seeds and roasting it. Raw meat swimming in a bag meant deliciousness the next night!

Hot dogs... Still in the wrapper and heated with continuos running hot water in the sink. It was a creative solution to a gas problem (the stuff that runs the oven and stove, not the flatulance...)

never had a sous-vide dish and mom didn't much use plastic bags either. she did pack me awesome lunches in tupperware though - fried rice, spaghetti, sandwiches, etc. all good and homemade.

i've never had sous-vide or shake 'n' bake! mom used to bake chicken in reynold's oven bags though, pretty tasty results AND easy cleanup :P

Peanut butter and fluff sandwich aka the Fluffernutter. Wrapped in a plastic bag, it never fails to taste like childhood.

I've never had sous-vide so I'll say a massive roast beef sandwich for lunch when I was in middle school.

I agree with SarahB. Those deep-fried short ribs at Ko were amazing. I still pack my lunch items in plastic bags - not quite as exciting as those short ribs.

Pot Roast. Slow cooked with vegetables and a gravy that would make Elvis beg for eighths.

Never had sous -vide, but Mom used to make a whole chicken w/ vegetables slow cooked in those plastic Reynolds bags. So juicy and delicious.

Mom used the recipe on the box for roasted potatoes with lipton onion soup mix!
