Meet & Eat: Eric Ripert

Eric Ripert is the executive chef and co-owner of three Michelin star–winning French restaurant Le Bernardin, and in 2003 was awarded the James Beard Award for Outstanding Chef of the Year. What is your favorite meal of the day and where do you get it? It's lunch and I usually eat at the restaurant—however, from time to time I sneak away for a pizza at Serafina on 55th and Broadway.

Favorite comfort food? French fries.

Guilty pleasures? Where should I begin? Let's start with dark chocolate....

Describe your perfect meal. A perfect meal to me is being surrounded by my family and friends in a beautiful location—and of course enjoying great food and drinking fantastic wines.

Food you won't eat? Food that lacks freshness.

Best restaurant recommendation you've ever gotten? And who was it from? My wife, when she told me to go to Spigolo, and Jean-Louis Palladin, who told me to go to Peasant.

Your Favorite burger in New York City? The one I make at home.

Favorite bagel? I am not an expert, but I enjoy H&H.

Best late-night eats? Balthazar.

Undiscovered gem? I don't think there are any left in this age of the internet.

What is New York missing, foodwise? A very luxurious Indian or Lebanese restaurant.

i really love this feature! i would love to read what he has to say, but i can't stop looking at his eyes.....

Do a follow up interview to get his at-home burger recipe!

le sigh...what a fox. He can fix me burgers any day of the week.

who else used a french accent as they read that? lol. i can do a damn good french accent in my mind as i read.

I just love him! Did anyone see him on that No Reservations where he works as a line cook with Bourdain in Les Halles? Cool as a cucumber.

Eating at Le Bernardin for the first time next week. So psyched!

@bitchincamero After I saw that No Reservations episode I added Ripert to my list of favorite chefs. He and Bourdain together were great tv.

The link to the No Reservations video on youtube gives a "this video is no longer available" message. Can the video be found anywhere else on the web?

the Bourdain/Ripert camaraderie is great to watch - makes me want to go hang out and have drinks with them - they should do a tv series together

@bitchincamero: I saw that clip and he was great. What's NOT to like about him? He's fantastic all the way around. A talented, detail oriented perfectionist who performs swimmingly under the gun. And a trip to his restaurant is a treat you will not soon forget.
