Sugar Rush: Bo Lo Bao from Ping's in Chinatown

20080602pineapple.jpg

Bo Lo Bao from Ping's Seafood Restaurant in Manhattan's Chinatown. Sweet and crusty on top, custard filling with chunks of pineapple on the inside, these buns are available as Dim Sum on the weekends. Usually they run out, so it helps to start asking for them the minute you sit down, that way you increase your chances of getting them before you're done eating.

Baw law bao (literally meaning pineapple bun) do not necessarily have pineapple filling. The name comes from the idea that the bun's outer curst resembles a pineapple. If you go to a bakery and order a baw law bao, they will by default give you a bao with no filling on the inside. But there are many variations of a baw law bao. You can get it with nai wong (milky, eggy cream filling), red beans, taro...

i know! that's what makes this version so awesome... i hate buns with no filling. the chunks of pineapple were a very pleasant surprise...

Yum! I love Ping's for dim sum and I've never seen these buns there before. Can't wait to try them out! Thanks, Zach!
